gluten-free grilled cheese sandwichIt’s fitting that the first wheatless wednesday post be a classic grilled cheese and soup. It is minus 30 degrees outside and I couldn’t face a trip to the grocery store, so I cracked (well, flipped) a carton of soup and made a grilled cheese sandwich.

Normally this would be an uninspired meal, except that for a celiac, a good grilled cheese is a rare luxury.

Enter Udi’s bread. My mom, the most dedicated gluten-free (non-celiac!) shopper I know, discovered Udi’s at Save-On-Foods in Edmonton. This is truly the fluffiest, tastiest, most bread-like bread I’ve had since, well… bread. And until Calgary stores begin carrying it, she and I will continue to import it ourselves. Luckily it freezes well; my freezer is loaded.

My grilled cheese was half-and-half swiss and old cheddar, with a sprinkle of salt and pepper on the outside before serving. Yum.

    I’m addicted to the ground flax bread from the GF Patisserie bakery out in Cochrane – a bit expensive but so good! They also make other tasty treats and too die for banana muffins. The bread has been a saviour during pregnancy. Have you checked it out before?

    Also, I saw Udi’s muffins at Sobey’s the other day so maybe they will start carrying more of that brand. I’ll have to keep my eye open for the bread you are talking about and the other wonderful things they have.
